Chocolate Devil’s Food Cake with Olive Oil

3 cups flourpicture

2 cups sugar

6 tablespoons cocoa (natural)

2 teaspoons baking soda

½ teaspoon salt

3/4 cup extra-virgin olive oil

2 tablespoons white vinegar

1 tablespoon vanilla extract

2 cups cold water

Preheat the oven to 350. In a large mixing bowl sift together the flour, sugar, cocoa, baking soda and salt. With mixer on low speed, pour in the oil, vinegar, vanilla, and water; beat until smooth. Pour the mixture into two greased and floured  9″ pans, or in one 13x9x2-inch pan. Bake for 30 minutes (40 for large cake), or until a toothpick inserted in center of  cake comes out clean. Put the cake pans on racks and cool for 15 minutes before removing the cakes from the pans to cool completely. Dust with powdered sugar.

Note:  this cake is perfect on its own as a breakfast cake, or with tea in the afternoon.  If you wish, you can make your favorite frosting and fill and frost the cake for a special occasion.  Chocolate, coffee, vanilla, orange, caramel, cream cheese, the possibilities are endless!
